Some really savory and healthy side dishes that everyone will love.

Bobby Flay’s Grilled Sweet Potato and Scallion Salad

We know; we had you at Bobby Flay, right?  There is no denying that the celebrity Chef and restauranteur comes up with some of the most amazing recipes that are positively worthy of trying at home.  We might not be able to “Beat Bobby Flay” in a cookoff, but we can appreciate his expert and healthy recipes.

This is an amazing side dish that will remind you that the nutritious sweet potato should be part of our weekly diet, and not limited to just special occasions and holidays.  You can save some time (because sweet potatoes can take longer on the grill than other types of fruit and vegetables) by microwaving them for 10 minutes on the high setting to soften them, prior to grilling.

Don’t bother removing the peel from the sweet potato before your grill it, because once cooked, you know that the root vegetable can get soft and it falls apart easily.  Keep the sweet potatoes whole (after thoroughly washing them) during the grilling process, and then follow the instructions in this recipe on The Food Network. It’s filling, and full of great fresh summer flavor.

Grilled Corn with Spicy Aioli

Have you ever tried Mexican street corn?  A combination of seasonings and an incredible herbed sauce take corn on the cob to a whole new level.  If you have never tried to grill corn before, we have some advice to help you do it like a pro.   Pre-soak the corn without removing the husks for about thirty minutes in lukewarm water.  Next, trim the husks back but reserve the inner most layers, and place the corn on indirect flame on your grill.

A lot of the rich flavors of fresh corn on the cob are locked into the corn husk.  When you grill it, the husk helps to not only infuse those flavors into the corn, it also helps to lock in the moisture, so that you don’t end up with a dried and unpleasant texture.  Sriracha and a quality low-fat mayonnaise make the delicious spicy aioli sauce, that you can drizzle on the corn (reserve some for serving and dipping) while it is grilling.   This recipe from the food bloggers at Pure Wow has a bit of spicy kick, with extra smoked paprika added to the aioli.

Mexican Corn and Quinoa Salad

Did you know that quinoa is a super food?  It’s not actually classified as a grain, because each kernel is actually a seed that is derived from a flower.  When cooked, the hard shells unfurl to reveal tender high-fiber seeds that are not only edible, but they are a healthier alternative to rice, offering protein, fiber, iron, thiamin, magnesium, manganese, folate and other essential vitamins and minerals.

What ever flavors, herbs and spices you add to quinoa are rapidly infused into the seeds without becoming soggy.  That makes it the perfect base for any kind of cold salad recipe, including this one suggested on the food blog “What’s Gabby Cooking?”

You can use canned kernel corn if you are in a hurry to create this side-salad, or you can go the extra mile and grill up your own cobs of corn and use grilled hot corn instead (recommended).   There are so many great flavor levels to this cold salad recipe, including fresh jalapeno, cilantro, cotija cheese (or feta), avocado and Monterey jack cheese.  This one might just become a family favorite!

Creamy Broccoli Salad

We’re fans of Chungah Rhee, who is the culinary genius behind the food blog Damn Delicious®.   Rhee innovates healthy recipes that are economical to prepare, and never compromises on taste.  So, her suggestions are sensational when you are stuck for a good side dish or recipe idea.

Because of the rich beefy flavor of Free Graze burgers, you want to serve something healthy that has a little fresh crunch.  Broccoli is the perfect salad, because it is fortified with 100% of your RDA for vitamin C and vitamin K.  It is also high in potassium and folate, two other nutrients we don’t get enough of in our weekly diets.

If you are pressed for time, try the broccoli florets in the prepared salads section at your grocery store, so that you can skip the trimming and sectioning of the vegetable.  Make sure you wash the broccoli thoroughly and follow these steps in the recipe.   You’re going to love this Asian inspired fresh salad, that has cheddar cheese, red onions, bursts of dried cranberries and crunchy cashews.   It’s the perfect pot luck salad to bring to any family gathering too!
